Crawfish and Chicken Etoufée

Crawfish and Chicken Etoufée - Here is a list of the ingredients:

6 tablespoons of salted butter
6 tablespoons of flour
2lb of precooked Crawfish (with heads non shelled)
3 chicken breasts
2 green bell pepper chopped
1 medium sized onion chopped
2 stalks of Celery chopped
1 small can of Corn
4 garlic cloves chopped
1 teaspoon of thyme
2 1/2 cups of chicken broth
1 tablespoon of Worcestershire sauce
1 table spoon of Cajun seasoning
Several drops of tabasco (depending on your taste)
Salt and pepper to taste


In a non stick skillet melt the butter and allow it to brown (without burning it) Sprinkle in the flour and stir continuously until it forms a nice golden colored roux. Allow to simmer about 8 minutes.
As your roux is simmering, remove the heads from your precooked crawfish and peel them. Remove the heads and place them in a casserole with 2 cups of Chicken broth. Bring to boil and remove from the heat. (this will make an excellent broth for the etoufée). Strain the heads and keep the broth and set it aside. In a saucepan with a little olive oil dice your chicken breasts and cook on both sides till they are cooked through. Add the onions, bell pepper. corn and celery to the roux and let them simmer for about 10 minutes (till they become translucent) and stir occasionally. Once they are cooked add in the garlic cloves and thyme for about 1 minute. Add the chicken broth, Worcestershire sauce, and Cajun seasoning. Add the cooked Crawfish and Chicken and let them cook a further 5 minutes. You can add as many of drops of tabasco but start off with a few so the dish does not become over powered. Use salt and pepper to taste. Because the chicken broth usually has salt in it, the etoufée will not need much but I would add pepper. Serve this dish over rice and bonne appetit!!

Shrimp Etoufée


This is possibly one of the best homemade Shrimp Etoufée dishes I have ever had. Here is a list of the ingredients:

2lb of deveined and de shelled Shrimp (frozen work fine)
2 green bell pepper chopped
1 medium sized onion chopped
2 stalks of Celery chopped
4 garlic cloves chopped
1 teaspoon of thyme
2 1/2 cups of chicken broth
1 tablespoon of Worcestershire sauce
1 table spoon of Cajun seasoning
Several drops of tabasco (depending on your taste)
Salt and pepper to taste

Cucumbers and Potatoes in a Red Wine Vinegar and Cream Sauce


This recipe is very refreshing and everyone will love it. Again it is does not take long to make, it is cost effective and most of all delicious. Here are the ingredients:

1lb of potatoes
1 Large Cucumber
1/4 cup of red wine vinegar
1 Cup of liquid cream
Salt and pepper
Chopped Chives or green onions


Begin by boiling your potatoes with their skins on until cooked. In a colander (strainer) peel and slice the cucumber and sprinkle some salt and pepper on top to remove excess water. Leave to strain about 20 minutes. In a bowl, combine and stir the cream and red wine vinegar and add some salt and pepper to taste. Peel the potatoes, slice them and place them in a bowl with the cucumber. Pour the cream sauce on top and add more salt and pepper depending on the taste. Sprinkle some chopped chives or green onions on top.This recipe can be done with warm potatoes or cold. Bon Appetit :) :)

Curried Cauliflower and Parmesan Cheese


This curried Cauliflower and Parmesan Cheese recipe is another, easy, very tasty and cost effective recipe. It also takes no time at all to make. Use the following ingredients:

I head of Cauliflower
2 tablespoons of Curry Powder
I tablespoon of Olive Oil
I teaspoon of Garlic Salt (or more depending on your taste)
1/2 a teaspoon of Pepper
1/4 cup of liquid cream
Parmesan Cheese


Prepare your cauliflower by rinsing it well and removing the outer leaves. Break it down into florets. Boil your cauliflower in lightly salted water. Once the cauliflower is cooked, place in a strainer to remove as much water as possible. In a pan, heat up the vegetable oil and sprinkle one tablespoon of curry and stir. Add in your cooked cauliflower along with the garlic salt, pepper and remaining curry powder. Mix all the ingredients together and finish by adding in the cream and sprinkle the parmesan cheese on top. If you would like a crust on top, place it under the boiler for a minute or two. This recipe is absolutely delicious and will blow your guests away. Bon Appetit!!!

Tip of the day - How to clean a glass top stove without expensive chemical products

Steps to Clean a Glass Cooktop:


Tools you will need:
  • Paper towel or clean dish cloth- to wipe up lose debris from stovetop
  • Hot soapy water- I fill the sink, or you could fill a bucket or bowl (use 1-2 tablespoons dish liquid for soap)
  • Baking soda (about a cup – enough to sprinkle over stovetop surface)
  • Old cloths or rags – enough to cover the entire stovetop surface
  • Sponge – make sure it is clean (do NOT use the abrasive side if your sponge has one, only the spongy side)
  • Rubber gloves
  • Microfiber cloth -to buff on the shine
Let’s Clean:
  1. Use paper towels or a clean dishcloth to remove as much lose debris and liquid as you can from the cooled cooktop.
  2. Make up your hot soapy water in the sink, bucket or bowl (be sure to wear the gloves so you can make the water pretty hot)
  3. Place rags in hot soapy water
  4. Sprinkle baking soda over the entire stovetop
  5. Remove rags from water and wring them out just a little, so they are still pretty wet and lay them over baking soda covered cooktop
  6. Let sit for about 15-30 minutes. (keep an eye on it, if it looks like it’s starting to dry pour a little of the hot water over the rags if they are becoming too dry)
  7. Remove all the rags from the cooktop.  Place one rag in the soap water and ring it out some and use it to wipe down the cooktop, in a zig-zag pattern.
  8. Wet sponge with cool water and wipe up an remaining debris or baking soda.  At this point, if you have anything that is still stuck on, try using a nylon pot scraper to loosen.
  9. Once everything is removed and clean, use the microfiber cloth and buff the stovetop to a dry shine.  You can also use a little glass cleaner if you are seeing streaks

Baked Brie with Apples, Brown Sugar and Pillsbury Dough


Are you thinking of having friends over for the Superbowl 2015? If you are, this recipe will blow them away. It is easy, very cost effective and takes less than five minutes to prepare. You will need to following ingredients:

1 Round Brie
1 granny smith apple (peeled, quartered and remove the pips)
1/4 cup of brown sugar
1 roll of Pillsbury crescent dough
1 beaten egg to baste

Preheat your oven to 350. Start preparing by removing the dough for its tube and roll it into a square form (as seen in photo below). Add the brie in the center of the pastry and place the sliced granny smith apples on top along with the brown sugar. Fold the pastry over the brie so it is totally covered. Baste the top with a beaten egg and place on a cookie sheet in the oven for 20- to 25 minutes. Once it is golden brown, remove from the oven and let it cool for 10 minutes.(if you do not let it cool the cheese will be too runny) This can be served with crackers or on sliced apples. It is highly addictive and really delicious. Bon appetite

Homemade Butternut Squash and Green Onion Casserole


I was recently introduced to Butternut Squash by a very good friend of mine and ever since I am totally addicted. This recipe is easy and will blow your guests away. Use the following ingredients:

1 large or two butternut squash
10 sprigs of green onions
1 egg lightly beaten
1/4 cup of liquid whipping cream
Salt & Pepper
8 Club (reduced fat crackers) for the topping
Parmesan Cheese


Peel the butternut squash, remove the pips inside and cut into cubes. Place in a pot of water, add a little salt, cover and bring to a boil. Once it has boiled lower the heat down so it remains simmering for about 20 to 25 minutes or until it is fully cooked. As the butternut is cooking heat your oven to 350. In a bowl lightly beat an egg and add in the liquid cream, salt and pepper. Chop the green onions and add to the mixture. As soon as the butternut squash is cooked drain it well, to remove as much water as possible. Once it has drained, mix the butternut squash with the egg, cream and green onions. Place in a casserole dish and crush the crackers on top. Sprinkle parmesan cheese on top and bake in the oven for 30 to 40 minutes until the top is golden brown. Bon appetite!!

Homemade Garlic Flavored Hummus


This Hummus recipe is very easy and fast to make. All you need are the following ingredients:

2 cans of Chickpeas
4 cloves of garlic
3 tablespoons of olive oil
Salt and pepper to taste
1/4 teaspoon of cumin
Chives or green onions for the top

In a blender, start by blending the garlic, add in the remaining ingredients adding in the olive oil as it blends. Once everything has been blended, pour into a bowl and put green onions or chives on the top. Hummus goes great served with pita chips. Bon Appetit!!!

Crockpot (fall off the bone) Chicken


As many times as I have eaten chicken, I have to say this is the best recipe ever. It takes less than 5 minutes to prepare and it will literally melt in your mouth. In a crockpot, place three balls of tinfoil at the bottom of you crockpot. Once you have rinsed the chicken and removed the giblets from the inside, pat it dry with a paper towel. Season your chicken with, Paprika, Garlic Salt, Pepper, Onion Powder and place a whole lemon cut on half on the inside. Place the chicken in your crockpot on the tinfoil balls by making sure the chicken has no direct contact with the bottom or sides of the crockpot. Set your crockpot on low and cook for 8 hours. Once cooked the chicken will literally fall off the bone and melt in your mouth. Bon Appetit!!

 
 

Chicken, Pasta, Spinach, Mushroom, and Green Onion Casserole


Here is a recipe that will not only take long to make but it is a time saver and absolutely delicious. I used chicken and pasta that I had made the day before so it took no time at all to make.


1 Cup of Chopped Green Onions
1 Cup of Mushrooms sliced
2 Cups of Pre Cooked Chicken ( or whatever leftover chicken you have)
2 Cups of Pasta ( I used the small shell pasta)
1/2 bag of Frozen Spinach
1 Cup of Velveeta Cheese Cubed
I Large Can of Cream of Mushroom
Salt and Pepper to taste
Grated Cheddar Cheese

Begin by boiling your spinach in lightly salted water for (about 10 minutes) then drain.
In a pan, add some olive oil and cook the green onions and mushrooms until browned. Once they are cooked, add in the leftover chicken, pasta, spinach, can of cream of mushroom, the velveeta cheese and salt and pepper. Allow the ingredients to simmer on medium until the cheese has melted. Set your oven to 350. Pour the ingredients into a baking dish, sprinkle grated cheese on top and warm in the oven for about 10 minutes. Finish your dish under the broiler until the cheese on top has melted and browned. Bon Appetit!!!

Enyaeire's tip of the day :):)

Let's face it no one likes the smell of bleach lingering on their fingers. Here is the easiest and non toxic way of removing that annoying odor.To remove bleach smell from hands (and that slimy feeling) pour a little vinegar or lemon juice over your hands then rinse. (bleach is alkaline, vinegar and lemon are acid, so they cancel each other out and balance the pH of your skin.)

Before the hard freeze and ice sets in, coat the rubber gaskets around the doors with vegetable oil or a thin layer of petroleum jelly to prevent them from freezing shut. Enyaeire's tip of the day

Tired of using toxic products to clean your oven? Self clean works well on most ovens but it takes time and burns up more energy. The simple solution is the following: use 1/4 cup of baking soda and add enough water just to make a thick paste. Spread the thick paste all over the inside of your oven and let sit for 30mins. With a damp sponge wipe off the dirty residue. No scrubbing needed. For tougher stains leave the baking soda on longer. Check back daily for more tips of the day :)))
