Cucumbers and Potatoes in a Red Wine Vinegar and Cream Sauce

This recipe is very refreshing and everyone will love it. Again it is does not take long to make, it is cost effective and most of all delicious. Here are the ingredients:

1lb of potatoes
1 Large Cucumber
1/4 cup of red wine vinegar
1 Cup of liquid cream
Salt and pepper
Chopped Chives or green onions

Begin by boiling your potatoes with their skins on until cooked. In a colander (strainer) peel and slice the cucumber and sprinkle some salt and pepper on top to remove excess water. Leave to strain about 20 minutes. In a bowl, combine and stir the cream and red wine vinegar and add some salt and pepper to taste. Peel the potatoes, slice them and place them in a bowl with the cucumber. Pour the cream sauce on top and add more salt and pepper depending on the taste. Sprinkle some chopped chives or green onions on top.This recipe can be done with warm potatoes or cold. Bon Appetit :) :)
