Homemade Butternut Squash and Green Onion Casserole


I was recently introduced to Butternut Squash by a very good friend of mine and ever since I am totally addicted. This recipe is easy and will blow your guests away. Use the following ingredients:

1 large or two butternut squash
10 sprigs of green onions
1 egg lightly beaten
1/4 cup of liquid whipping cream
Salt & Pepper
8 Club (reduced fat crackers) for the topping
Parmesan Cheese


Peel the butternut squash, remove the pips inside and cut into cubes. Place in a pot of water, add a little salt, cover and bring to a boil. Once it has boiled lower the heat down so it remains simmering for about 20 to 25 minutes or until it is fully cooked. As the butternut is cooking heat your oven to 350. In a bowl lightly beat an egg and add in the liquid cream, salt and pepper. Chop the green onions and add to the mixture. As soon as the butternut squash is cooked drain it well, to remove as much water as possible. Once it has drained, mix the butternut squash with the egg, cream and green onions. Place in a casserole dish and crush the crackers on top. Sprinkle parmesan cheese on top and bake in the oven for 30 to 40 minutes until the top is golden brown. Bon appetite!!
