Homemade Garlic Flavored Hummus


This Hummus recipe is very easy and fast to make. All you need are the following ingredients:

2 cans of Chickpeas
4 cloves of garlic
3 tablespoons of olive oil
Salt and pepper to taste
1/4 teaspoon of cumin
Chives or green onions for the top

In a blender, start by blending the garlic, add in the remaining ingredients adding in the olive oil as it blends. Once everything has been blended, pour into a bowl and put green onions or chives on the top. Hummus goes great served with pita chips. Bon Appetit!!!

Crockpot (fall off the bone) Chicken


As many times as I have eaten chicken, I have to say this is the best recipe ever. It takes less than 5 minutes to prepare and it will literally melt in your mouth. In a crockpot, place three balls of tinfoil at the bottom of you crockpot. Once you have rinsed the chicken and removed the giblets from the inside, pat it dry with a paper towel. Season your chicken with, Paprika, Garlic Salt, Pepper, Onion Powder and place a whole lemon cut on half on the inside. Place the chicken in your crockpot on the tinfoil balls by making sure the chicken has no direct contact with the bottom or sides of the crockpot. Set your crockpot on low and cook for 8 hours. Once cooked the chicken will literally fall off the bone and melt in your mouth. Bon Appetit!!

 
 

Chicken, Pasta, Spinach, Mushroom, and Green Onion Casserole


Here is a recipe that will not only take long to make but it is a time saver and absolutely delicious. I used chicken and pasta that I had made the day before so it took no time at all to make.


1 Cup of Chopped Green Onions
1 Cup of Mushrooms sliced
2 Cups of Pre Cooked Chicken ( or whatever leftover chicken you have)
2 Cups of Pasta ( I used the small shell pasta)
1/2 bag of Frozen Spinach
1 Cup of Velveeta Cheese Cubed
I Large Can of Cream of Mushroom
Salt and Pepper to taste
Grated Cheddar Cheese

Begin by boiling your spinach in lightly salted water for (about 10 minutes) then drain.
In a pan, add some olive oil and cook the green onions and mushrooms until browned. Once they are cooked, add in the leftover chicken, pasta, spinach, can of cream of mushroom, the velveeta cheese and salt and pepper. Allow the ingredients to simmer on medium until the cheese has melted. Set your oven to 350. Pour the ingredients into a baking dish, sprinkle grated cheese on top and warm in the oven for about 10 minutes. Finish your dish under the broiler until the cheese on top has melted and browned.
